Carbonic maceration of about 12 days. Harvest destemmed with temperature control and daily spreading. The latter allows a better extraction of the polyphenols. Located in the heart of Cathar country, near the small town of Tuchan, on clayey-limestone slopes, the vineyard is planted with noble vines of Vieux Carignano and Grenache.
