In Puglia, the total production of the Polvanera Cellars extends over approximately 100 hectares of Primitivo, Aleatico, Aglianico, Minutolo, Moscato, Falangina, Marchione and Bianco d'Alessano. Our labels differ from each other by the age of the vineyards and by the type of land on which they are located; The altitudes, however, vary from 300 to 450 MT; at these altitudes one benefits from considerable temperature ranges which favor the expression of particularly fine and elegant aromas in the wines of Puglia. The training systems are the sapling (for the old sixty-year-old vines) and the spurred cordon, all grown organically. Our Apulian wines remain faithful to the authentic flavors of the grape variety; the grapes coming from the old saplings are vinified with modern techniques but of absolute oenological simplicity. The maturation and refinement phases take place in stainless steel tanks and in the bottle. No elevations in barrels in order not to cover the native scents of the primitivo with notes of wood and not to favor oxidative evolutions. This synthesis between innovation and tradition has given life to a wine strongly linked to the territory, with characteristic notes of elegance, drinkability and extraordinary freshness and minerality.

The family and history

Polvanera was born from a long family tradition that has always had roots in viticulture. Filippo Cassano, owner and oenologist, has always been aware of the potential of the primitivo in his territory. Thanks to the experience of his father Vincenzo and the school training at the "Basile Caramia" wine school in Locorotondo, Filippo wanted to focus on pure winemaking, enhancing the autochthonous and territorial recognition of Puglia. Located between Acquaviva delle Fonti and Gioia del Colle, Polvanera is immersed in a unique landscape, with vineyards, dry-stone walls and downy oak trunks. The cellar, unusual and characteristic, is dug 8 meters into the limestone rock. The structure allows the wines to refine at a constant temperature, combining utility and beauty. Attached there is a historic farmhouse from 1820 with a rustic taste, used for hospitality. The company is located in a very strategic tourist-hotel area of ​​Puglia: it is twenty minutes from both the Itria valley and Matera. Modern pressing and vinification systems contribute to the realization of the Bio proposal. Together with his valuable collaborators and the support of the family, Filippo Cassano continues to carry out an ambitious project, aimed at enhancing the primitivo and other native vines, continuously enhancing the quality of his products.
