Pasta with garlic, oil and chilli pepper is a dish that originated in Southern Italy, where oil and chilli pepper have always been two very common ingredients. This simple but delicious first course has now spread throughout Italy.

The recipe for spaghetti with garlic, oil and chilli

The classic recipe calls for spaghetti , extra virgin olive oil , garlic , chilli pepper (dry or fresh) and chopped parsley leaves. Boil the water for the pasta and in the meantime prepare the sauce.

Brown a large clove of finely minced garlic and the chilli pepper in a pan, then add the finely minced parsley. Add a few tablespoons of the pasta cooking water and let it infuse. Drain the spaghetti al dente and immediately pour it into the pan. Blow them up and serve piping hot!

White wine is a must with spaghetti with garlic, oil and chilli pepper ! The ideal combination is with Trebbiano , Pinot bianco , but also Chardonnay and Falanghina are excellent companions!
