Sauvignon Blanc, together with Chardonnay, is by far the most cultivated vine in the world, and for this reason it has a vast range of styles and flavours. Originally from the Loire Valley, today we can really find it everywhere. It takes its name from the French term "sauvage", which means "wild", due to its leaves that resemble wild vine.
In Italy , the cultivation of Sauvignon Blanc is mainly concentrated in Friuli-Venezia Giulia , Veneto and Trentino-Alto Adige . It is also present in Emilia and Lombardy and has recently reached the central-southern regions as well. The grape variety is also quite widespread in Chile , Australia , New Zealand and South Africa .
The main fruit aromas of Sauvignon Blanc are lime, green apple, passion fruit and white peach. Depending on how ripe the grapes are when the wine is made, the flavor will range from tangy lime to peach in bloom. What makes Sauvignon Blanc unique from other white wines are its other herb aromas such as bell pepper, gooseberry, and grass. These flavors come from aromatic compounds called pyrazines and are the secret to the taste of Sauvignon Blanc.
