Risotto with Glera white wine and parmesan

Glera white wine and parmesan risotto is a very simple and quick first course to prepare, but impressive and above all... delicious! Did you know that Glera is the basic grape variety for the production of Prosecco ?

How to prepare Glera white wine risotto

Glera white wine risotto is very easy to make. The doses indicated in the recipe are ideal for 4 people.
Ingredients
  • 280 g Carnaroli rice
  • 1/2 cup of Glera
  • 100 g of Parmesan
  • 1 white onion
  • butter (to taste)
  • Salt to taste)
  • vegetable broth (to taste)

Method

  1. To prepare the risotto with Glera white wine and Parmesan, start by browning the onion in the butter. When it has become transparent, add the rice and toast it for 1 minute.
  2. Blend with the Glera and let the liquid absorb. Once blended, pour a ladle of broth and continue cooking by adding the latter until the rice is ready (it will take about 15-18 minutes).
  3. Remove from the heat, add the diced butter (30 g) and the cheese to the pot. Then stir until it reaches a creamy consistency and serve. If you want, you can finish the risotto with parmesan with a sprinkling of pepper.
